Vegetable Cutlet...A very famous dish of India...available in any stalls of any street,listed on top in any Restaurant Menu,most sort out dish of any party or occasion,can be taken in any meal course,can be made according to your taste,availability and choice of veggies....loved by all age group across the country and now world wide too:)))))))))

Ingredients
  • For Dough:
  • 200 gram potato (boiled and mashed)
  • 100 gram french beans (finely chopped)
  • 100 gram carrot (grated)
  • 100 gram cauliflower (grated)
  • 100 gram spring onion (finely chopped)
  • 100 gram green peas (blanched and crushed)
  • 100 gram beet root (grated)
  • 100 gram fresh coriander (finely chopped)
  • 50 gram capsicum (finely chopped)
  • 50 gram boiled corn (slightly crushed)
  • 50 gram spinach (finely chopped)
  • 25 gram fresh fenugreek leaves (finely chopped)
  • 5 gram fresh mint leaves
  • 10 gram green chilli paste or to taste
  • 5 gram ginger paste
  • 10 gram garam masala powder
  • 20 gram dry mango powder
  • 100 gram fresh bread crumbs
  • 25 gram roasted gram powder
  • 5 gram sugar (optional)(but it will enhance the taste)
  • salt to taste
  • For Slurry:
  • 50 gram cornflour
  • 100 ml water (chilled)
  • For Coating:
  • Semolina
  • For Dip Frying;
  • Vegetable Oil
Method
1.

For Dough: In a large flat bowl ,mix all ingredients ,with light hands and refrigerate for 10 min or till use.

2.

For Slurry:Mix cornflour,salt and water and make thin watery slurry,keep aside.In a plate spread the semolina and keep aside.

3.

Now make,little bit bigger balls from dough and give the shape of your choice by hands or molds.

Dip the prepared cutlets in cornflour slurry and coat them with dry semolina and fry in hot oil on high flame,drain on tissue paper or kitchen towel.

Serve HOT with any chutney or sauce,along with hot or cold beverages...:))

NOT:Usually fresh fenugreek leaves are not included in cutlets,some people may use dry fenugreek leaves powder to it,but believe me guys it gives such a nice fragrance to the dish you can"t imagine.

7.

NOTE: I had used veggies according to my choice you can ad or avoid any veggies in any proportion.

8.

NOTE : To avoid calories you can shallow fry it or bake it or steam it also.
