Many want to avoid eggs for myriad reasons - health, culture/religion, likings etc. Although adding eggs makes the end product so much better, it does not mean that we cannot do without it. There might be some compromise in taste and texture but for most of the cases the end result is still pretty much decent sans eggs too. Here is a list which comes handy to me while I am making such a recipe. Image source

Most of these substitutions will work interchangeably for all other baked Goods. I have compiled this list using various resources on net. Keep in mind that using substitutions may affect texture and taste of your baked goods. Please use this list as a guideline and use your discretion to make a substitution in the recipe (depending on what purpose the egg serves in the recipe - as a binder, for adding moistness, for texture etc)

Brownies Silken Tofu/ Tofu ( 1/4 cup blended silken tofu = 1 egg ) Process in a blender until completely smooth and creamy, leaving no graininess or chunks. You will want to attach other wet ingredients to this mixture to return with it to blend properly.
Applesauce (1/3 cup applesauce = 1 egg or ¼ cup Applesauce + 1 tsp Baking Powder ) If chocolate in the brownies overpowers the flavor of applesauce so it can be safely used, and is in fact, one of the best egg substitute in brownie mix.
Soy Yogurt/Plain Yogurt ( ¼ cup Yogurt= 1 EGG ) If you are a vegan, you may opt for soy yogurt. Otherwise plain yogurt will do the trick. Just beat it well and add it to the brownie mix.
Flax seeds (1 tbsp ground Flax seeds +3 tbsp Water =1 egg Grind the flax seeds in a coffee grinder, and mix with water. Allow it to rest till it becomes gelatinous, then use.
Bananas (½ pureed Banana, abt 1/4 cup = 1 egg) Just mash it smooth, and use it but the addition of banana will alter the flavor of the brownies
Commercial Egg Substitute Use as per instructions on pack. Many people who have used this find it to leave behind a peculiar taste. However, there have been exceptions to this case.
Breads Bananas (½ pureed Banana, abt 1/4 cup = 1 egg) Recipes: Banana Blueberry Bread
Soy yogurt (1/4 cup soy yogurt = 1egg) Soy yogurt works deeply like whiz tofu as an egg replacer.Helps to make it moist
Water (one egg with 1/4 cup water. Recipe:Vegan Banana Nut Bread
Flax seeds (1 tbsp ground Flax seeds +3 tbsp Water =1 egg Adding ground flax seeds to any recipe add Omega-3's to the recipe! You can buy ground flax seeds in the health section of most grocery stores.

Vegetable Oil (1/4 cup = 1 egg) Recipes: Banana Cupcake
Buttermilk Buttermilk is one of the preferred egg substitute used for eggless cake recipes. What you need to do is add half a cup of buttermilk (instead of one egg) and follow the same directions as you did for baking regular cakes. The only thing is to add less amount of water for making the dough. With buttermilk, the resultant cake will be very soft and tasty.
Pureed Fruits (3 tablespoons of pureed fruit = one egg ) In cases when you don't like using eggs and buttermilk in cakes then a good egg substitute for baking cakes is, adding pureed fruits. Use 3 tablespoons of pureed banana (for one egg) and follow the same tips for baking cake. Even without eggs, you will surely serve a soft and delicious cake with pureed fruits.
Gelatin (Non Vegetarian) (1 tablespoon gelatin + 3 tablespoons lukewarm water = 1 egg) Another popularly used egg substitute in baking is unsweetened and unflavored gelatin. Most vegetarians prefer adding Agar Agar instead of Gelatin as a substitute in cake, instead of the other options. For using gelatin in baking cake, mix together one tablespoon gelatin with three tablespoons lukewarm water. Add this mixture for making the cake dough.
Flaxseed (1 tablespoon of flaxseed oil+ 3 tablespoons water = 1 egg) Stir the flaxseed mixture well and allow it to thicken for a few minutes. Strain the seeds by using a muslin cloth and use the filtrate for baking cake.
Vinegar and Baking Powder Use this egg substitute in cake, only when you require more than one egg for baking. Mix one tablespoon each of white vinegar and water in a glass. To this, add one teaspoon of baking powder and stir well until the mixture blends well. Now, use this egg substitute for your cake recipe.
Potato Starch (2 heaped tbsp potato starch = 1 egg)
Arrowroot Powder (2 heaped tbsp arrowroot powder  = 1 egg)
Soy flour (1 heaping tablespoon of soy flour + 2 tbsp water = 1egg)
Soda Pop A regular-sized (12 oz.) can of soda pop can be used as a substitution for 3 eggs in your baking recipes. Additionally, one regular-sized (12 oz.) can of soda pop can be substituted for the oil/egg combo required by most boxed cake mixes.

Ener-G Egg Replacer (follow package instructions) It seems to work best surrounded by cookies, or things that are supposed to be a little crispy.Otherwise, there have been complaints that it tends to add certain aftertaste noticeable more in other bakes like a chalky taste.

Savory Dishes(as binders/ coating) Mashed Potatoes When a recipe in any savory dish like Vegetable Loaves or Burgers calls for eggs as a binding agent, then any of these will work as an substitute for eggs. When used for Frying (as an coating of eggs and flour), you can use a mix of all purpose flour + water to form into a paste and apply that as coating instead of beaten eggs.

Cooked Rice
Tomato Paste
Chocolate pies, Quiches, pudding Tofu Tofu is great for egg substitutions in recipes that call for a lot of egg. To substitute for only one egg in a recipe, whip or blend 1/4 cup soft tofu and add to your cooking.
Cornstarch This especially works great for puddings. 1 egg = 2 tbsp cornstarch + 2 tbsp water
Recipes: Chocolate Tapioca Pudding
Salads/ Sandwiches/Omelet Tofu Diced or mashed tofu can replace chopped hard-boiled eggs in some salad and sandwich recipes. Scrambled tofu makes a delicious alternative to scrambled eggs.

Egg White Substitute --> Use Agar Powder - For each egg white, dissolve 1 tbsp plain agar powder in 1 tbsp water. Whip, chill and whip again. Egg Substitute Mix (homemade) --> To replace 1 egg: 2 tablespoon flour + 1/2 teaspoon oil + 1/2 teaspoon baking powder + 2 tablespoons liquid (milk, cream, buttermilk, diluted yogurt, or dairy free alternatives like coconut milk, soy milk, etc) beaten together until smooth. or 2 tablespoons water + 1 tablespoon oil + 1/2 teaspoon baking powder, beaten together until smooth.

Many years ago my mum made a Danish omelette (æggekage) which looking at a recipe today for 5 persons, uses 20 eggs. Mum always used fresh breadcrumbs (I helped to crumble the bread) and I have often wondered why. I cannot remember how many eggs she used. The only reason I can think she used the bredcrumbs is the cost of eggs and coming out of the 1940's depression (in NZ) she may have carried this substitution with her through time. How likely is this, or is there another reason for the substitution. I have not found ONE recipe using breadcrumbs in the recipe, hence my thought that its a substitution she made. Anyone with bright ideas please? Thanks :)

I disagree that "adding eggs makes the end product so much better". I hope no one is put off trying egg free baking because of it!! I have been baking for years without eggs and my backing since turning my back on eggs has been better than it ever was with eggs. There may be a few things that you can't do so easily....meringue....but pretty much all everyday baking can be done just as well if not better so don't be afraid of baking without eggs! It might take some trial and error but with the right recipes you won't miss eggs at all! :D

This is a wonderful and I'm sure, very time consuming on your part, site! I have been wanting to try to convert my mother's rice pudding recipe into a vegan recipe. There are a lot of eggs in the recipe, for thickening and flavor. I am going to maybe do a half and half of the tofu and cornstarch substitute. We shall see how it goes! When I was in America, I baked many products with golden flaxseed. So will try your soy FLOUR/water blended tip. I use soy FLOUR as a functional ingredient. I bake by percentage s, and grams. Formulas. More creative and consistent! Please check out bbga.org. Also sfbi.com. has great baking classes.Even gluten-free, which includes some vegan. One other comment was about a pecan pie. One of my vegan books, (back in the states), used a combination of agar and arrowroot. The sweetener is maple syrup and barely malt syrup. Bake a blind crust, toast the pecans. Simmer the syrups,with the agar till completely dissolved, then add the arrowroot slurry. Simmer till clear, and pour over the filled crust. Chill. Please forgive me for not remembering the ratio of agar / arrowroot. Will try to see if I can get it. But the combination is "custardy". Good mouth-feel. There are LOTS of egg free mayo options available. At Whole Foods you can get the brand new "Just Mayo" (company sponsored by Bill Gates). Most stores with health sections have Nayonaise which is what I use.It is on the shelf. Veginaise is in the refrigerated section.They also have no cholesterol (no eggs) and tend to be much lower in calories, too!

Jeanette, I think each item replaces one egg. So it would be 3T of vinegar etc. I might use flax seed or chia seed instead of the one you looked at. You might also google "vegan applesauce cake" and see what others use. Like here it looks like she is using some cornstarch. I am allergic to raw egg whites. I cannot be in the same room with a meringue. What do recommend for those recipes that require raw egg whites? Cooked is OK for me just not raw. I thought the response to Rohit, the professional baker, was a bit snide. Eggs are a given in baking. With only 1.5% of children allergic to eggs and 70% of those individuals outgrowing that allergy by age 16. And in the US, only .5% - 3% are vegan. So, really, most professional bakers use eggs. And therefore wouldn't have a clue what to substitute for them. But, Rohit, use the suggestions in the list. And you'll unfortunately have to learn by trial and error, especially if you're also having to substitute for other ingredients (like butter and/or wheat flour). Good luck!

For a cobbler like any dessert you need to know if the egg substitute is replacing moisture or adherence. If moisture then things like applesauce work. If adherence then things like cornstarch or rice flour with a bit of vinegar will work.With cobbler you could probably try the applesauce substitute but if it is too moist then do part applesauce part cornstarch. Check out veganbaking.net for great tips giving the science behind the substitution. He also has some already veganized recipes many of which I have tried with great success.

So far I cannot see a difference in soda pop used in the box cake so we tend to use diet. My husband swears that with a white cake mix you taste root beer if it is used but I would not go that far. Dark sodas do not cause a color change either from what I can tell. Literally it is just the amount used-8oz for a fluffy cake and 10-12 oz if you want a denser, sticky but ultra sweet cake. The amount of calories saved by using diet soda is about 100 calories per slice of cake!

It is my experience that you cannot detect the taste of the applesauce but that you can of the banana. The only thing that I have found that overpowers the banana flavor is peanut butter. Applesauce is also easier to always have on hand. One of the single serving containers is ALMOST ½ cup so works to substitute for 2 eggs. I always have a big jug of applesauce in the fridge as I use it often. I am also now using rice flour when I need a more dry egg substitute. It does not have an aftertaste like I can detect with cornstarch in baked goods.

DK, This is a FANTASTIC list! I've never seen one so complete. I have it bookmarked and reference it all of the time. I hope you'll consider adding The Vegg, which is a vegan yolk replacer and The Vegg Baking Mix, a vegan whole egg replacer for baking to it. I've been amazed by how well they work and their wide variety of uses. They even have an eggy taste. (Disclaimer; I am not associated with the company or it's employees in any way. I just like the products!) Cindy, white chia seeds are readily available online and in the health food sections of some stores (look for salba). I have not found chia seeds of any variety to be more expensive than flax seeds but that may depend upon what part of the country you live in. Where I live (West Coast), they are very popular. I personally prefer to use them over flax because of their gelling ability and because they don't have a strong taste, which can be distracting depending upon the other flavors in the recipe.

Generally I use things like arrowroot or cornstarch where I am making a flaky cookie and the egg binding is what is needed instead of the moisture, so it depends on the recipe you are using. If you do not need the moisture just use 2 tablespoons of the arrowroot. If you need moisture, too, you could use water or depending on the recipe you could add a dab of applesauce or pumpkin puree or zucchini puree etc.

I do see chia seeds in recipes in lieu of flax seed as the egg substitute. I think it is rarer, however, since chia seeds are more expensive and sometimes harder to find than flax seed. Also, they would be visible in a finished product unless you used white chia seeds, which I have never seen. I think the measurements for either flax or chia are the same.

I have found great tips there like for cakes and brownies to rise without an egg the batter has to be thick, more like a dough than a batter. Also the 12 oz soda and box cake mix. While that makes a super sweet cake that I love, it is also very sticky and does not rise. If you want fluffy over sweet, use 8 oz of soda and make the batter like a biscuit dough and it will rise to be fluffy but without the 34 mg of cholesterol per slice of a cake with eggs.

Thanks for the information. I am glad to see that you use Milk. I like to stay as natural as possible to retain the closest taste as with a cake that has eggs. I tried the apple sauce and although everyone loved it it was not my favorite. I was tasting the apple sauce due to my great sense of taste for cake as I am always baking. I recently substitue vanilla/regular almond milk and wonderful. Cake was perfect. However I will try the butter milk although I know I need to add venegar. I made corn bread with butter milk and it was find so I may try the cake. Thanks and have you ever try just milk as a substitute?

Thank you so much for the tips! This came especially helpful when I was right in the middle of baking muffins and realized we just used the last two eggs for dinner! Not being much of a baker, I almost gave up and cleaned up, without thinking outside the box. Needless to say, once I found your website I was relieved to see so many options for egg substitutes. The muffins turned out amazing... so I think I will carry on with the modification of using pureed bananas in the muffin recipe instead of eggs going forward :)

Bridget, many other replacers use 1/4 cup per egg. I would try that or maybe half of that (2 tablespoons) since avocado is so dense and nearly 100% fat. I am not sure what avocado does once cooked. Are the fats still okay for the body or are they denatured in some harmful way? I hope you try it and report back with what recipe you used, and what texture and flavor results you had.

Vanessa, you can use egg replacers regardless which part of the egg your recipe calls for. Here's another recipe that has no eggs at all - a sort of chocolate cake alternative. I've made it. It's good and people ask for the recipe. It's not as cakey as a flour cake. I usually add an extract to give it more flavor. Nidia, Sorry, I don't know how to reply to your post directly. I have success by using various egg replacers within the same recipe. I don't rely on just one. Gelatin is a good one (you can use knox gelatin but Great Lakes gelatin is much healthier) - mix with COLD water first. Also, arrowroot or tapioca are useful replacers. Most people with the list of allergies your daughter has do better with a grain-free diet while they're healing the gut. With that in mind, consider making treats with either coconut flour (cheaper) or almond flour (pricier). Coconut flour treats and good health info are on the empoweredsustenance.com site, and almond flour recipes are on elanaspantry.com site. They both address all the allergies except egg. These recipes usually call for many eggs per, and I use ground chia, gelatin, applesauce, arrowroot, etc. in each recipe and they work pretty well. They all have different properties, and that's why I do a mixture, to more emulate real eggs. Also, let yourself off the hook. This type of baking is new to you. Do your best, but understand it takes time to get it right. It's okay if your results are not perfect. It's better that your daughter doesn't have the stomach pain and other effects of eating foods she can't handle. You might also check into the GAPS diet, which heals the gut and is soothing. I cannot believe you recommend using that egg re-placer by ener-g. Its not organic, and it contains MODIFIED cellulose. SO BAD FOR YOU! The point of substituting eggs is for your health, and modified fake crap is a lot worse for you than eggs.

I'am looking for a recipe that is organic on making home made cinnamon rolls that someone may have in their grandmas old books that will take 2 days to make, they can be organic or not, I can change that all the ingredients to organic myself I say 2 days cause it takes that long for the raising n stuff I had 1, n when I moved it got lost or through away, these where very hugh, n took up to 2 cookie sheet pans or 2 9x13 pans n all I remember is it was a very very long recipe n it calls for white flour n wheat flour n with all the prepairing n getting it ready n raising n the finely cooking took 2 days like i said can anybody out their help me with this. I to can only eat things that is organic so I redo alot of the recipes so I can eat alot of stuff I'am allgic to pesticides, hornmores, n antibotics, dairy, eggs, whey, so I watch n read everything,I do not have a galdbladder n was told I could eat everything after that well I could not n get sick after that it will come out of 1 of the ends is all i need to say, but if I eat this stuff I'am ok, for everybody that may have the same problem as me just try drinking the organic milks w/o hornmores, pesticdes, n antibotics in it n see if that works for you same with the eggs thats what I do open the lid n see what it says, if it don't say that well its not for you (eggland) is one of the names I use horizan , silk, r 2 of the milk blands I use, they also have sorbet icecream but watch them some do have milk in them n if it doesn't say organic milk your not getting that your getting real milk, then go on internet n read, read, read all your labels n read whats best for you cause everybody is not the same, I hope that helps n feel free to send me a message n let me know if anybody wants :-P

@alex...if you truly have an allergy to eggs, you'll know it. From someone who is also terribly allergic to eggs...for me, it feels like labor pains or the worst cramps times ten!!! My stomach pains could last hours or days and I was stuck in bed in pain after eating even a couple bites of egg. After being allergy tested at 12 years old, it was proven that I have a severe allergy to eggs, getting allergy tested helps! Thank you for this substitute post!! :-D

If you go to a health food store you can find a product called Egg Replacer by Ener-G. It works very well with baking. I use this all the time when baking as the replacement for eggs. It is not that expensive and you get a lot out of one box. Hope this helps!

I bake vegan all the time, use no eggs EVER, and still found this list useful because it breaks down what can work best in which type of recipe. I have no idea if the canola oil I'm using is for binding or moisture, etc., because vegan cookbooks never go into all that. Thank you!

Actually pasta doesn't necc. need an egg and you can make a good pasta with just flour and water. Will post a recipe for the same soon. But I am assuming that a flaxseed sub would work and enhance the pasta nutritionally too. --DK

You can also use pureed pumpkin as a replacement for both the eggs and the oil in brownies (if using a boxed mix, just add a can of pumpkin puree and bake as directed). You can't taste the pumpkin any more than you can taste applesauce as a substitute, and the texture is much denser (more like a real brownie!)

I have used applesauce in brownies & cookies successfully. partly due to having lots of it on hand and partly to cut the fats/oils in a recipe. If you do use applesauce and want to limit the sugar, use the "natural" versions of the brand. it has no extra sugar like the original.

We make substitutions all the time with eggs. Our fave for savory dishes like cornbread is to use pureed squash or carrots. This started because I had all these extra jars of baby food hanging out in my pantry. 1 jar=1 egg essentially. Now, I just keep a few pureed baby foods in my pantry lol. Also, works well for camping :)

Make sure you cut the sugar if you use something like applesauce. I didn't think about that when I made brownies using applesauce instead of eggs. They came out pretty good - they were super-fluffy and tended to fall apart when they were warm, but once they cooled they stuck together better. They were a bit too sweet, so next time I'll cut the sugar a bit.

Hello, Soy (unfermented, at least) is really bad stuff (for health, and especially for people with intolerance). Do you think regular yogurt would work just as well? I was at Albertsons and they didn't have egg substitutes so I called Vons/Safeway (CA) and they SAID they had it. So I bought all the ingredients from Albertsons (since they're cheaper), headed over to Vons for the LAST ingredient, and when I arrived, no one had ever heard of egg substitutes. Stupid lady on the phone said they had it but they really didn't. I was really mad. THANK YOU for making this list. It's a real life saver. :-D

Hi, I was wondering if you have used or know of a gelatin substitute that is not Agar-Agar. I want to make panna cotta but do not want to add either gelatin or Agar. Hi DK, I used buttermilk as a substitution & made Dates & Walnuts cake. It turned out amazing. Thank you very much. However, on 2nd day the cake developed a slight wet/ sticky layer on top. My husband refused to eat the cake with this layer & removed the top part. I would like to know why this happened and how can I avoid this. It would be really helpful. Thanks again.

Most vegetarians and absolutely no vegans would use gelatin as a substitute for eggs since it's also an animal product.

You dont have to use it - Its just a substitution which I have mentioned also for ppl who can't eat eggs for health reasons. This list is not exclusive to vegetarians and Vegans. Its for anyone wishing to substitute eggs - period --DK
